Curried Tomato Soup

A comfort food that is rich and warming.

Below you will find two different methods and approaches to this dish.

Method 1

  • Made with premade boxed soup from the store:
  • 1 Box Tomato or Tomato Basil Soup
  • 1/2 Can Coconut cream
  • 1 or 2 teaspoon Coconut sugar (or to taste)
  • 2 teaspoons Yellow curry (or to taste)
  • 1/2 teaspoon Himalayan salt
  • Freshly ground pepper to taste

Add all ingredients together in a 1/1-2 or 2-quart saucepan. Stir or whisk over a medium heat until smooth and nicely warmed.

Leftover rice or quinoa (about a cup) makes a nice addition.

Method 2

  • Made with vegetable broth and gnocchi*.
  • 4 Cups Vegetable broth (If using boxed this is one box.)
  • 6 or 7 oz. Tomato Paste
  • 1 Can Coconut cream
  • 3 or 4 teaspoons Coconut sugar (or to taste)
  • 2 teaspoons Yellow curry (or to taste)
  • 2 Teaspoons Parsley
  • 1/2 teaspoon Himalayan salt
  • Freshly ground pepper to taste
  • 1 Lb. Gnocchi

In a two-quart saucepan whisk together broth, tomato paste and coconut cream on a medium heat until smooth. Stir in sugar, curry, parsley, salt and pepper.  Add gnocchi and cook until tender.

  • Gnocchi is a potato pasta. Look for it on the shelf or freezer case in the store. If making a vegan version be sure to look for a version made without eggs or ricotta.
