A comfort food that is rich and warming.
Below you will find two different methods and approaches to this dish.
Method 1
- Made with premade boxed soup from the store:
- 1 Box Tomato or Tomato Basil Soup
- 1/2 Can Coconut cream
- 1 or 2 teaspoon Coconut sugar (or to taste)
- 2 teaspoons Yellow curry (or to taste)
- 1/2 teaspoon Himalayan salt
- Freshly ground pepper to taste
Add all ingredients together in a 1/1-2 or 2-quart saucepan. Stir or whisk over a medium heat until smooth and nicely warmed.
Leftover rice or quinoa (about a cup) makes a nice addition.
Method 2
- Made with vegetable broth and gnocchi*.
- 4 Cups Vegetable broth (If using boxed this is one box.)
- 6 or 7 oz. Tomato Paste
- 1 Can Coconut cream
- 3 or 4 teaspoons Coconut sugar (or to taste)
- 2 teaspoons Yellow curry (or to taste)
- 2 Teaspoons Parsley
- 1/2 teaspoon Himalayan salt
- Freshly ground pepper to taste
- 1 Lb. Gnocchi
In a two-quart saucepan whisk together broth, tomato paste and coconut cream on a medium heat until smooth. Stir in sugar, curry, parsley, salt and pepper. Add gnocchi and cook until tender.
- Gnocchi is a potato pasta. Look for it on the shelf or freezer case in the store. If making a vegan version be sure to look for a version made without eggs or ricotta.
